Looking for some weekend baking? Something to prep for the family to snack on during the week? Here we have...Berry Bars 😍 . Here’s what you’ll need: . * 4 cups oats, 2 cups ground. * 1 tbsp chia seeds. * 1 tbsp ground linseeds. * 1 tbsp cinnamon. * Handful of raisins. * 1 overripe banana, mashed. * 2 tbsp olive oil. * 1/4 cup sunflower seeds. * 1/4 pumpkin seeds. * 1/4 milk of your choice (we used oat). * 2 cups frozen berries (we used cherries, blueberries & raspberries). . Here’s what you need to do: . 1. Line a baking tin (11 x 7 x 1.5inch) with greaseproof paper and set the over to 160 degrees (fan oven). . 2. In a bowl add all the dry ingredients (oats, chia seeds, linseeds, cinnamon, raisins, pumpkin & sunflower seeds) and mix together. . 3. In a small bowl defrost the berries (you can do this in the microwave) for around 3 minutes or until they are soft, you will now find there is also juice. . 4. Add the berries and the juice, along with the olive oil, mashed banana and a little of the milk. Mix together, if it is still dry add more milk a little at a time until the mixture comes together. . 5. Transfer to the baking tin spread evenly and press down. . 6. Bake in the oven on the middle shelf for around 25 minutes, they should be firm. Leave to cool for around 15 minutes, transfer to a wire rack and cool completely before slicing. . 7. Store in an airtight container in a cool dry place for up to 3 days. . . These make a great snack on-the-go, breakfast bar, lunchbox treat (they are nut-free) or make them go further by chopping into small pieces and using as a yoghurt topper.
