Veganuary for the Lazy Cook - Day 14 (2 Serves)
Breakfast - Chop 2 bananas, 2 apples, 1 orange, 2 pears, and 2 peaches. Add 6 tablespoons of raw oats and 2 handfuls of walnuts. Squeeze a little lemon juice over the bananas.
Lunch - 2 x avocado, cucumber, grated or pickled carrot, and hummus sandwich on wholemeal bread.
Dinner for 2 - Black Bean Patties (makes 6 patties)
4 boiled potatoes, mashed
400 grams cooked black beans, washed and drained
A few dashes of pepper
A dash of salt
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1 tablespoon Worcestershire sauce (optional)
1 brown onion, diced
4 cup mushrooms, diced
1/2 red capsicum, diced
2 spring onion leaves, chopped
A handful of chives, chopped
1/2 cup peas and corn mix
2 tablespoons nutritional yeast
1 1/2 tablespoons flaxseed
Vegetable broth for brushing
Mash all ingredients together well. Form 6 patties by hand. Brush both sides with vegetable broth. Transfer to oven for 30 minutes @ 200 C. Turn at halfway point in oven. Leave 2 patties aside for lunch the next day. Serve with rice and salad.
