Lunch today was inspired by Bobby Parrish! I love following his page because he posts a lot of healthy keto recipes and always has awesome advice on what to buy at the grocery store! Here is his favorite lunch salad (which he by the way just posted on his feed) and I made a few adjustments to it just to use what I had in my fridge! The salad came out so delicious hope you guys try it out and don’t forget to give @flavcity a follow!
5 chicken tenders
2 eggs, fried
2 1/2 cups baby spinach, rinsed
3 Campari tomatoes, quartered
1/3 English cucumber, sliced
1 scallion, chopped
2 tbs mayonnaise
1 tsp turmeric
1 tsp cumin
1 tsp smoked paprika
1 tsp salt, more to taste
1 Tbs + 1 tsp olive oil, divided
Juice of 1/2 a lemon
Everything but the bagel seasoning(optional)
1. Mix together the turmeric, smoked paprika, cumin, and 1 tsp of salt. Rub it into the chicken tenders and place them on a skillet with 1 tbs of oil. Cook until done, set aside to rest.
2. Meanwhile to a large bowl add spinach, cucumbers, scallions, a pinch of salt, a pinch of pepper, mayonnaise, 1 tsp oil, and juice of 1/2 a lemon. Toss and coat everything together. Then add the tomatoes and gently toss again. Set aside.
3. In a skillet cook the 2 eggs to your liking and set aside.
4. Divide the salad into two serving plates, slice the chicken tenders and add to the salad, and top with one egg each. Sprinkle the eggs with everything but the bagel seasoning (optional). Enjoy!
