Yesterday, deep in the trenches of continuing #education, yay #lifelonglearning learning about all sorts of ailments and diseases... and OH MY goodness I got so anxiety stricken since anyone could get any of these diseases or ailments, maybe it's been stewing in us and we never even knew, building up plaque in our arteries, ahhhh!!!! . So here is some information in the right direction to live a #heathylife trying to avoid high #cholesterol, #heart problems, & atherosclerotic disease. . Cholesterol is bad... it can lead to #heartdisease and #heartattacks, but there is a "good cholesterol" too, it's called High Density Lipoprotein Cholesterol (HDL-C). This type of cholesterol is good because it actually removes cholesterol from places where it doesn’t belong e.g. the blood vessel wall. In this instance the higher the number, the better off you are and the lower the number, the worse off you are. In point of fact for each 1mg (0.03 IU) increase of HDL above normal, there is a 2-3% decrease in the risk of atherosclerotic disease while for each 1mg (0.03 IU) decrease in HDL below normal there is a 5% increase in the risk of atherosclerotic disease. . The #MediterraneanDiet is a good place to start it’s associated with #BetterCholesterol and #overallhealth. You can start incorporating the following Mediterranean-style and HDL-friendly foods into your daily diet: . Olive oil - #hearthealthy fat can lower the #inflammatory impact of LDL cholesterol. . #Beans and legumes - are a great source of soluble fiber. Black beans, black-eyed peas, kidney beans, navy beans, lentils, and others. Canned contain about half as much folate. #Folate is an important heart-healthy B vitamin. . Whole grains - including bran, cereals, and brown or wild rice, may lower your LDL and total cholesterol. . High-fiber #fruit - Fruits with a lot of fiber, such as prunes, apples, and pears . Breakfast today: butternut crust pesto feta pizzaaaaa 🤤 this was soooo good! . This is the butternut pizza crust I got from @traderjoes. It is PRETTY FIRE. Looooved the crispiness. I baked it according to the instructions in the box and it worked wonderfully. I burnt it a little because when I flipped it over, a piece that was stuck to the aluminum foil (which I didn't grease properly) ripped 😅 but I am most definitely getting this again. . I topped it with homemade pesto and feta cheese. Ate 1/2 for breakfast, refrigerated the other half for tomorrow 😄 today is one of my rest days, so I like to increase my fats and lower my carbs a little to hit a macro split of 33C/33P/33F more or less (compared to my usual 50C/25P/25F) while keeping kcals at maintenance instead of surplus. I do this because I like fats more than carbs, but I can't perform well at the gym on a higher fat/lower carb diet, plus I am not as satiated as when I eat more carbs so I tend to eat more. My rest days give me the break I need to get the fats I like 😍 Carb cycling has honestly been working so well for me! . For the pesto, I pulsed the following ingredients in my food processor: 1 box of basil leaves, 1/3 c of pine nuts, 1/3 c parmesan, 2/3 c EVOO, 1 fat garlic clove, s&p. I used about two spoonfuls for the pizza. Keeping the rest for Marc's pesto pasta! . #fitmeal

Starting with my favorite dish from yesterday’s @vipca_usvi Broker Lunch onboard @sy_eros. When I receive the guests preferences, I like to take them all into consideration when creating a menu. We had a request for vegan, the Mediterranean Diet, and had pregnant guest. I was really inspired by all of this info, so, I opted for a Mediterranean theme. One because it’s super healthy, secondly, when it’s hot and humid, I prefer eating cold meals that cool you down. I did the best I could to take photos quickly before they took off out of the galley (so don’t judge 💁🏻‍♀️)Dessert: Vegan Lemon-Mango Panna Cotta using Agar Agar is a jelly-like substance, obtained from red algae/seaweed. It has a ton of heathy properties. Much better than using Gelatin. Garnished with Marigold Flower and Malabar Spinach Flower Main course: Lamb Kibbeh (Falafel for the Vegan) with a cold Tomato-Herb Farro salad, served with Tzatziki topped with Radish Micro-Greens, Feta To Start: Grape and Zucchini Gazpacho using Guava juice and @bolthousefarms plant milk garnished with EVOO, cracked Red Pepper, sliced Grapes and Starfruit Flower. But most times I personally hit them, I know why I’m there. ⁣ Whether it was larger portion sizes than normal, too many untracked meals off my plan, less intensity in workouts, not enough water, etc! Recette Gratin de pâtes Ingrédients : - 500g pâtes - 1kg crème fraîche - 400g de jambon - 200g feta - 300g d'emmental râpé - 1 cuillère à soupe avec du sel - 1 œuf - 1 cuillère à soupe avec du muscade moulue - 100ml huile d'olive Préparation : Dans une casserole on verse 2 litres d'eau on fait bouillir les pâtes on les enlève de l'eau et on commence à ajouter les ingrédients le jambon , l'huile , et on les met dans un plateau ensuite on rajoute le feta ensuite l'emmental . Dans un bol on verse la crème fraîche l'œuf le sel et le muscade moulue on les mélanges bien fort et on les verse sur le plateau avec les pâtes qu'on a préparé avant . Et on le met dans un four . Cuisson : Le four il doit être allumé 10min avant à 250 degrés et on le laisse au four entre 35-40min et c'est fini. My life is consistently coming full circle. Finishing my Capstone paper for my masters, I used prospective longitudinal cohort studies to prove my theory of the protein effects of protein on osteoporosis in postmenopausal women. Without these studies we could never learn and improve the health of society. Yesterday I got the privilege of entering one of these studies as a participant. I could not have been more thrilled. No matter your role in this big fat complicated works, each of if us can effect change. This makes me my heart sing!! Together we change the world for the better with science and evidence. This was GOOD 💜 Roasted eggplant 🍆 topped with tahini sauce, za-atar seasoning, fresh parsley and pomegranate seeds, inspired by @themediterraneandish. Definitely a winning combo! 😍 If you aren’t a fan of vegetables or find them to be bland, try experimenting with different preparations like roasting and sautéing, and different seasonings and flavors. Cover and refrigerate for at least 3 hours, preferably overnight. This step is not strictly necessary, but allowing oats to soak for a few hours will make them easier to blend and give you a smoother, smoother smoothie. *** When ready to eat, mix on high until the oats are completely broken and achieve a smooth and creamy consistency. Transfer the smoothie to a small saucepan over medium heat (add chocolate chips, if used) and bring to a boil or boil, depending on how hot you want. If the smoothie is too thick, add one drop of almond milk until the desired consistency is reached.
