One of the ways I grow and cultivate my gifting/passion is through indirect learning. I treat every environment, conversation, interaction, etc. with a growth mindset that says, "What can I learn? How can I be better?" When the pandemic hit, I was steeped in my day job as a Teacher, with the food business being supplemental income. Then we went on "extended spring break" with no certainty of if/when the school year would relaunch and instead of sitting idle, I immediately switched gears into full-time food business mode. And that's when it hit me, "Mise En Place". Mise En Place is a French culinary phrase which means "putting in place" or "everything in its place". I learned this phrase indirectly through a conversation with @mr_beastmode19 last year. He was sharing how one of his favorite aspects of #chelife is the "Mise En Place"; making sure everything is "put in place" beforehand so the cook will be smooth & easy. This stuck with me and is one example of how indirect learning is beneficial. The concept of "Mise En Place" has helped me grow as a chef & entrepreneur in so many ways:
Establishing weekly rhythms for specials.
Advertisement, social media content, and customer engagement.
Strengthening strategic partnerships.
Mapping out delivery routes.
Making price points reasonable and affordable.
Learning and catering to my niche market.
Taking the time to inventory ingredients and supplies daily.
And last but not least, making sure every ingredient and supply is prepped so orders can be produced and delivered unencumbered.
This is what the combination of adversity, uncertainty, time, and space has produced in me, not just in the kitchen, but in life in general; the pursuit of learning what it means to "put everything in it's place" in this season of life, self work, and entrepreneurship.
In a few short weeks of Bearded Chef PDX being my "day job" I've learned so much about my passion/gifting, my food business, and myself.
